Vegan Chocolate Banana Bread Pudding (Easy & Sugar-free) | Delia.v Life



We were just doing our weekly pantry clearance last weekend and found that there are always leftover bread and overly ripe bananas at the end of the week! Are we the only ones? Our freezer already had a substantial amount of frozen bananas which we've accumulated over weeks (don't ask how many) and we simply do not need any more for our smoothie bowls.



To use up these bananas and stale bread, we made this vegan Banana Bread Pudding and it was SO GOOD. This recipe is easy and can be made sugar-free. For us, we added chunks of chocolate to spice it up. The end result was a moist, rich and fragrant banana bread pudding with hints of melted chocolate.


Here is the recipe...


Ingredients 6 slices stale bread, cut into 1-inch cubes 350g mashed banana (about 6 medium bananas) 150ml coconut milk/unsweetened plant-based milk 1 tsp vanilla extract 1 tbs cornstarch 1/4 tsp salt 1/2 tsp ground cinnamon 1/4 tsp ground ginger 60g chocolate, chopped/ chocolate chips (use sugar-free chocolate for sugar-free recipe) Ice cream for serving (optional)

Instructions: 1. Preheat the oven to 180°C. Have ready an 6 x 6-inch baking pan or 8-inch round baking dish. 2. In a large bowl, whisk together the mashed banana, vanilla extract, salt, cinnamon and ginger. 3. In a cup, stir the cornstarch into the coconut milk until fully dissolved. 4. Pour the milk mixture into the mashed banana mixture. Whisk until well combined. 5. Using a spatula or spoon, stir in the bread cubes and chopped chocolate, and toss to coat completely. 6. Transfer the mixture to the prepared pan. Bake for 25 minutes, or until the top is golden brown. 7. Serve with ice cream if desired.
