Healthy Vegan Cookies - 3 Easy Recipes! | Delia.v Life


The past few days have been so gloomy, dark clouds hovering across the skies with an occasional rain. Well...in our opinion, any grey days can be saved with a batch (or three) of freshly baked, warm cookies straight from the oven!


A batch of cookies, a glass of milk, a good read is  what we love to indulge in on a rainy day. Let's talk about the cookies. For one, they are one bowl recipes which means minimal dishes to wash (YAY!). Furthermore, they require very minimal chilling time - 30 mins for two of the recipes and heck, none for the last recipe! We know that many good cookies recipes require chilling the dough to relax the gluten for a few hours or even overnight but no, ain't nobody got time for that we want cookies now!


Did I mention that these cookies recipes are crispy on the edges, soft and chewy on the inside and good for your body? ;) No, I don't just mean good for your emotional health hurhur these cookies recipes we are going to share is good for your physical health as well! Filled with nutritious ingredients such as oats, coconut sugar and nuts these cookies are good for your mind, body and soul!



Mocha Oats Cookies

Ingredients:

75g Coconut Sugar

55g Vegan Butter

15g Maple Syrup

1/2 tsp Vanilla Extract

1/2 tbs Hot water

1 tbs Instant coffee granules

60g Oat Flour

40g Dessicated coconut

1/2 tsp Baking Soda

1/4 tsp Salt

70g Rolled oats

60g 80% Dark chocolate, chopped


Instructions:

1. Preheat oven to 180°C and prepare a baking pan lined with baking paper. 

2. Cream the coconut sugar and vegan butter together until light and fluffy.

3. Add in maplesyrup, vanilla extract, coffee granules and hot water.

4. Sift in oat flour, baking soda and salt. Whisk until well combined.

5. Fold in the rolled oats, dessicated coconut and dark chocolate. Chill the cookie dough for 30 minutes. 

6. Roll 1 tsp of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.

7. Bake for 8-10 mins until edges are golden brown.


Cranberry Oats Cookies

Ingredients:

75g Coconut Sugar

55g Vegan Butter

15g Maple Syrup

1/2 tsp Vanilla Extract

60g Oat Flour

40g Almond flour 

1/2 tsp Baking Soda

1/4 tsp Salt

70g Rolled oats

60g Dried cranberries


Instructions:

1. Preheat oven to 180°C and prepare a baking pan lined with baking paper. 

2. Cream the coconut sugar and vegan butter together until light and fluffy.

3. Add in maplesyrup and vanilla extract.

4. Sift in oat flour, baking soda and salt. Whisk until well combined.

5. Fold in the rolled oats and dried cranberries. Chill the dough for 30 minutes. 

6. Roll 1 tsp of dough at a time into balls and place them evenly spaced on your prepared cookie sheets.

7. Bake for 8-10 mins until edges are golden brown.


Maple Almond Cookies

Ingredients:

130g Almond butter

45g Maple syrup

1/2 tsp Vanilla extract

35g Oat flour


Instructions:

1. Preheat oven to 180°C and prepare a baking pan lined with baking paper.

2. Whisk almond butter, maple syrup and vanilla extract together.

3. Stir in the oat flour until we'll combined.

4. Shape into a button by rolling 1 tsp of dough and flattening it with your thumb.

5. Bake for 6-8 minutes or until golden brown.
