Easy 5 Min Healthy Breakfast & Snack Recipes: 5 Vegan Toast Ideas using Rice Crackers | Delia.v Life



It's safe to say that everyone is familiar with the breakfast toast or sandwich but when it comes to rice crackers, we think it's still an underrated alternative! For a start, it's healthier than bread because it's gluten-free and less processed. Furthermore, it can spice things up by adding an extra crunch!



If you're following us for awhile, you would know that we love doing things out of the ordinary so while people are dishing out basic avocado toast and sandwich recipes (sorry not sorry), we want to share with you 5 creative ways to make healthy and tasty rice crackers! Taking inspiration from different cuisines all over the world, these are flavourful and unique. They only take 5 mins to prepare and are perfect for breakfast, as a snack or even for a light lunch!



Here are the 5 rice cracker recipes that we absolutely love, especially if we're feeling peckish during the afternoon.



Krimcheese Rice Cracker - Non-dairy cream cheese - Kimchi - Seaweed sesame topping

Spread a layer of cream cheese before adding on kimchi and some seaweed topping.

Avocado Chickpea Rice Cracker - Avocado slices - Chilli sauce/ketchup/ BBQ sauce - Roasted chickpeas Arrange the avocado slices on the rice cracker before drizzling some chilli sauce. Finish with a handful of roasted chickpeas.

Strawberry & Cream Rice Cracker - Coconut yogurt - Strawberry slices - Granola Spread a layer of coconut yogurt, then arrange the strawberry slices before topping with some granola.

PB Bacon Rice Cracker - Peanut butter - Coconut bacon - Maple syrup Spread a layer of peanut butter, then sprinkle a handful of coconut bacon and drizzle some maple syrup.

Cheesy Chickpea Curry Rice Cracker - 2 tbs cooked chickpeas - 1 tbs non-dairy yogurt - 1/2 tsp curry powder - Handful of shredded vegan cheese - Chopped fresh herbs such as basil, thyme, parsley (optional)

Mash the chickpeas up before adding yogurt and curry powder. Then, mix it up until you get a creamy texture. Spread it onto your rice cracker before sprinkling some cheese. Grill it in the oven before completing with some fresh herbs.
