Earl Grey Dalgona Pancakes Single Serving (Sugar Free + Vegan) | Delia.v Life
Dalgona coffee? Move aside cos that's old news! We have a new way of incorporating that frothy Dalgona goodness, and that's in our pancakes! We wanted to spice up our breakfast pancakes and since Dalgona is the new craze, why not add it to our pancakes?
Hence, we made a simple vegan Earl Grey Pancakes paired with our Earl Grey Dalgona recipe. This recipe is great on its own but amazing with the Dalgona. The best part is it's sugar free! The result is a fragrant and fluffy pancake that tastes super delicious! If you're not feeling so fancy and just want to look for a simple breakfast pancake recipe, simply leave the Dalgona out.
Without further ado, here's the recipe...
1 tbs Flaxseed meal 3 tbs Water 50g Whole wheat pastry flour/ All purpose flour 10g Monk fruit sweetener/ Raw sugar 1 bag of Earl Grey tea leaves (2.5g) 3/4 tsp Baking powder 80g Plant based milk 1/2 tbs Vegetable oil 1/2 tsp Vanilla extract Earl grey dalgona (Optional)
Instructions: 1. Make flax egg by mixing the flaxseed meal with water and letting the mixture stand for at least 15 minutes. 2. Meanwhile, sift together the flour, baking powder, earl grey tea leaves and sweetener in a bowl. 3. Mix together the milk, oil and vanilla extract in another bowl. Add in the flax egg and mix until combined. 4. Pour the wet ingredients into the dry ingredients. Whisk until just combined. 5. Heat an oiled pan on medium heat. The pan is hot enough when a drop of water sizzles upon touching the surface of the pan. 6. Ladle the pancake batter onto the heated pan and cook until bubbles appear and pop. Your pancake should be golden brown, if it's colour is very dark, lower the heat. 7. Flip the pancake and cook for another minute or so. 8. Repeat for the rest of the batter. 9. Top with earl grey dalgona if desired.
