Best Vegan Superfood Fudge Brownies (Low Fat, High Protein) | Delia.v Life


Today, we had a streak of luck. Sometimes/most of the times, we take several tedious trials to perfect a recipe. But today, lady luck decided to shine brightly on us and wala~ one trial and we knew we had nailed it. It was so simple to make, we were almost dumbfounded.



Let us present to you: THE SUPERFOOD FUDGE BROWNIES They are perfectly fudgy, decadent and delicious. The amazing thing is, they make your taste buds dance without spoiling your diet. Chock full of superfoods, these are not just bites of happiness, but bites of nutritious ingredients which are super good for your health!

Superfoods like cacao powder, maca powder, goji berries and nuts in this recipe are filled with antioxidants and vitamins for better overall health. Furthermore, this recipe is gluten free as we use oat flour! Don't fret if you don't have some of the superfoods we used like maca powder. You can substitute these with other superfoods like matcha, acai powder or carob powder--anything that makes sense for your taste buds. It's your brownies.

Lower in fat and higher in protein than regular brownies, these brownies are perfect for anytime of the day. If you're going to have them for dinner we totally understand! One advice though, make sure to make a double batch if you're living with your family or you might have none left once they discover these bites of happiness<3


Ingredients:

Brownies 2 tbs Flaxseed meal 6 tbs Water 300g Pressed tofu/ Firm silken tofu 1/2 tsp Vanilla extract 65g Cacao powder

170g Monk Fruit Sweetener/Coconut Sugar 40g Oat flour 25g Almond flour 1/2 tsp Baking powder 15g Extra virgin coconut oil 75g Roasted and chopped hazelnuts/Dark chocolate chips (optional)


Maca Almond Icing

100g Thick non-dairy yogurt

75g Smooth almond butter

15g Vegablum vegan honey/Maple syrup

15g Maca powder

Instructions: Brownies

1. Preheat the oven to 180°C and line a 7" x 7" baking tray with baking paper. 2. Mix the flaxseed meal with water and set aside for 15 minutes to make the flax eggs. 3. After that, combine the flax eggs and the rest of the ingredients, EXCEPT HAZELNUTS, into a food processor. 4. Process until the mixture is homogenous. 5. Fold in the chopped hazelnuts and pour into the lined baking tray. 6. Bake for 30-35 minutes until the sides are set but the middle is still slightly jiggly. The brownies will firm up when cooled.

Maca Almond Icing 1. Mix everything together until smooth. 2. Pipe on brownies and decorate as desired.
