This is the second series of our lower calorie vegan recipes that's super great for when you are trying to get back on track after feasting too much, without sacrificing on taste! Using ingredients from Everyday Vegan Grocer which sells so many amazing vegan products, we created two recipes that taste so amazing we are living for them!



These gluten-free, oat flour-based pumpkin waffles make a fun breakfast considering that you only need 3 ingredients. Let's be honest, no one likes to wash the dishes, but we want good food and this recipe delivers. These waffles freeze very well, too, make a big batch and pop them in the toaster on busy mornings and you’re good to go! Coming in at 185kcal per serving (if you care) this waffles makes a good snack, or you can also have the whole recipe as a nutritious meal like we always do 😁



Our 3 ingredient Danish pastry taste so good and look so pretty as well. They are the perfect pastries for entertaining or when you are feeling fancy~ while they are not necessary the perfect health food, we would say that these are soul food and its perfectly alright to have them occasionally! The fact that these are lighter in calories (60KCAL per piece ONLY!) than traditional Danish pastry sold in our favourite shops, makes this even more appealing.

Recipe:


Pumpkin Chai Waffles 100g Rolled oats 100g Pumpkin puree 1 can Minor Figures Chai Latte 1 tsp Baking powder (optional but makes your waffle fluffier)


1. Grind oats in food processor until powdery. 2. Add in the pumpkin puree, chai latte and baking powder if using and blend until well combined. 3. Cook the batter in a waffle maker according to your manufacturer's instructions.

Custard Danish Pastry 2 sheets Borg's Puff Pastry Nature's Charm Coconut Custard Fresh fruits Maple syrup (optional)


1. Preheat the oven to 200 degrees celcius and line a baking tray with baking paper. 2. Stack the 2 sheets of puff pastry one on top of the other. 3. Slice the square into 9 pieces and put them gently on the baking sheet. 4. Glaze with maple syrup if desired and bake for 15 mins or until golden brown. 5. Cut out a square in the middle of the pastry and fill it with coconut custard. 6. Decorate with fresh fruits and eat immediately!
